Korean Beef Bowls

Quick Korean Beef Bowl recipe!

A yummy meal with flavorful ground beef, rice, pickled veggies, and even a fried egg! Even customize your dish with other veggies and top with your favorite sauce.

Ingredients:

  • 1/2 cup coconut aminos or soy sauce

  • 1/2 cup honey or light packed brown sugar

  • 2 teaspoons sesame oil

  • 2 tablespoons rice wine vinegar

  • 1 tablespoon fresh, minced garlic

  • 1 tablespoon fresh, minced ginger

  • 1/4 cup fresh, sliced scallions (keep green part for garnish)

  • 2 lbs ground pasture-raised ground beef (or ground venison / ground turkey)

  • cooked, rice (brown, jasmine, etc - your preference)

Additional (Optional) Toppings:

  • sliced cucumbers (see pickling veggies below)

  • shredded / sliced carrots (see pickling veggies below)

  • sesame seeds

  • fried eggs (i like to cook mine in skillet that i cooked the meat in, for extra flavor!)

For Pickling Veggies:

  • 2 tablespoons rice vinegar

  • 2 tablespoons water

  • 1/2 teaspoon sugar

  • 1/2 teaspoon salt

Directions:

To Pickle Carrots + Cucumbers

  1. Place cut veggies into a bowl.

  2. Add 2 tablespoons rice vinegar, 2 tablespoons water, 1/2 teaspoon sugar, 1/2 teaspoon salt to bowl. Gently stir to coat the veggies and let rest while you prepare the rest of the dish.

For Main Dish

  1. In a small bowl, whisk together the coconut aminos, honey, sesame oil, rice wine vinegar, garlic, ginger, and scallions. Set sauce aside.

  2. Cook the ground beef over medium-low heat in a skillet. Break apart meat with utensil until browned. Drain any grease.

  3. Add the sauce mixture to the pan and increase heat to medium. Continue to cook, stirring occasionally until the meat is cooked through and sauce has thickened slightly (roughly 3-4 mins).

  4. Remove from heat. Spoon the ground beef into bowl over rice. Serve with sliced cucumbers, shredded carrots, fried eggs, and sesame seeds. Garnish with green scallions.
